Tony Harris’ Pork Tenderloin – Cooking Rocks!
COOKING ROCKS! – Roast Pork Tenderloin- Show #4
Tender, juicy and loaded with flavor!
1 Tenderloin of Pork (2 pieces) 2.5 to 3 lbs.
Dry Ingredients for rub:
1 Tbsp. Ground Black Pepper
2 Tbsp. Paprika
4 Tbsp. Dry Rosemary
1 Tbsp. Ground Red Hot Pepper (watch it!)
salt to preference (be careful or omit if using soy or worcestershire as they have plenty of salt)
Wet Ingredients:
2 Tbsp. Minced Fresh Garlic or coat moderately with Garlic Powder not Garlic Salt
Extra Virgin Olive Oil or Soy Sauce or Worcestershire Sauce
1 cup of White Wine
Steps:
Coat pork with either Extra Virgin Olive Oil or Soy Sauce or Worcestershire Sauce (just one, not two or three as all have different flavors)
Combine dry ingredients with Garlic and rub all sides of the pork
If using a Nu Wave Convection/Infrared oven set at 350F:
Cook both sides for 15 minutes per side
Conventional Oven 350F 1 hour uncovered ; more to desired wellness
De-glaze roasting pan / drippings pan with the white wine and any left over spices; strain and serve with pork
