Cooking Rocks Episode 5: Chilled Salmon Salad
COOKING ROCKS! – Chilled Salmon Salad – Show #5

Ingredients:
2 lbs. Salmon Filets
2 Tbsp. Capers
1 Tsp. Black Pepper
1 Tbsp. Minced or Crushed Garlic
2 Tbsp. Chopped Flat Parsley
2 Tbsp. Extra Virgin Olive Oil or Real Mayonnaise or Vegan Mayo Substitute
salt as desired
Steps:
If not using pre-cut filets, cut into 3 x 3″ pieces
Place Filets in steamer when water comes to full boil for 5 minutes or to desired doneness
Remove from steamer and chill in refrigerator for 30 minutes
After the chill, place salmon and all ingredients in a mixing bowl and toss lightly until well mingled BUT NOT MANGLED (be gentle)
*Tip: Wear food service gloves and hand toss. You’ll be able to gauge the feel and not completely mash everything. You need the texture!
